Michael Santo: From restaurants to one big extended family.

American House Holland Culinary Director Michael Santos comes from the world of restaurants. For 18 years, he was an executive chef and restaurant owner. People ask him all the time if he’s seen the hit TV show, “The Bear.”

“That was my life,” he said, laughing. “I stood out by the trash and ate standing up. I saw my wife and kids through the phone.”

About a year and a half ago, Michael joined American House. His story now may be a little less chaotic, but it still centers around two things: food and people.

“My staff includes my assistant, a sous chef, and I also have a big team of servers who go to all the individual buildings here. Many are here at 6 a.m. and raring to go.”

On any given day, Michael could have five or six servers per shift for breakfast, lunch and dinner. Working in a senior living community, he said, is like being in your customers’ house 24/7 with all their family and friends talking to you about what’s going on in their life.

“The people make it all worthwhile and rewarding,” he said. “There’s that same high you get from working in restaurants.”

The only difference now is Michael is face-to-face with his customers. “I love it. It’s like having an extra hundred grandmas and grandpas. You get to know them and build relationships with them. It’s one big extended family.”

Michael hits most of the seven buildings and most residents see him at least once a day during mealtimes.

“We started Family Night this year and it adds a little spice. It changes the everyday calendar menu. We decorate the buildings and all the families come and have a great time.”

Michael speaks with Rick Roberts, American House Regional Chef, on a daily basis. “I definitely feel well-supported. Rick reaches out with important details and everything is very well organized. I always have what I need and there’s never any unwanted surprises. Recipe ideas are always coming our way and when we have questions we get a response right away. If I were to call and say, I just don’t know what to do, Rick’s the type of guy who’ll say, OK, I’ll be there to help you out.”

Asked about being chosen as an exemplary team member, Michael was surprised.

“That’s nice to hear but I can’t take a lot of credit. Holland was seasoned before I got here, the residents are amazing and the support the culinary team receives is second to none.”
